Spanish Hot Chocolate

Last week, it was very cold outside, so I decided that I wanted to make hot chocolate. My Mom lived in Spain for one year after college and told me that they have a very nice hot chocolate there. Spanish hot chocolate is quite thick and made with real chocolate instead of cocoa. We made this recipe three times before the hot chocolate was thick, chocolaty and delicious but not too heavy. This is a perfect recipe to make when it's cold outside.


For 2-3 servings, you will need about 450 ml(about 2 cups) milk, 2 tbs cornstarch, 1 tsp cocoa, 1/4 tsp vanilla essence, 2 1/2 tbs sugar, and 50 g(scant 2 oz) dark chocolate.




1. Pour a little bit of milk in a small saucepan. Add the cornstarch, cocoa, vanilla and sugar and whisk well.



2. Add the rest of the milk and put the pan onto the stove. Heat the mixture over medium until the milk begins to steam. Whisk now and then.



3. Break the chocolate into little pieces and add them to the hot milk. Heat the mixture over medium and keep whisking until the chocolate has dissolved and the mixture is dark and thick.



4. Divide among 2-3 mugs and and dip some waffles or churros in it.
