Stracciatella Madeleines

Yesterday, I wanted to do some easy holiday baking, and thought Madeleines were the perfect cakes to bake. They remind me of the house of my grandparents in France in  winter. Usually, we make them without the chocolate, but with it they are even better!!! 



For 24 Madeleines, you will need 50 g (scant 2 oz.) dark chocolate, 100 g (3.5 oz.) soft butter, 3 large eggs, 125 g (scant 4.5 oz.) sugar, 1/2 tsp vanilla extract, 125 g (scant 4.5 oz.) flour, 1 tsp baking powder, 1 tbs milk. 




You will also need a Madeleine baking tin, or two baking tins if you want to bake all the cakes at the same time.




1. Preheat the oven to 175 C (350 F). Butter and flour the baking tin. You will need to flour it, because otherwise the cakes will stick to the tin.




2. Chop the chocolate. Do this by hand, because you want it to be a little course.




3. Cream the butter with a mixer. 




4. Add the eggs and beat until fluffy.



5. Add the sugar and flour and beat again.



6. Mix in the chocolate.



7. Fill the tin with a tsp. DON'T FILL THEM COMPLETELY, BECAUSE THE CAKES WILL RISE A LOT IN THE OVEN!



8. Bake the Madeleines for about 13 min. in the middle of the oven.



9. Take them out of the oven and let them cool a little. Take the cakes out of the tin.  (Bake another batch if you only used 1 tin).
